Waking on a February morning in a beautiful hotel just outside of Waterford, in the shadow of Butlerstown Castle, I opened the windows of my room onto a simple kitchen garden. Still covered in a fine blanket of dew, I will never forget the subtle scents of mint and thyme mingling with the fresh air which drifted through my window.

As the soft linen curtains began to billow in the morning air, I had a realisation that this clean, pure fragrance was the perfect way for me to prepare for the day ahead, and needed to be shared with the world. I'd spent a lot of time surrounded by heavy perfumes and I was ready for something light and sweet which I could enjoy every day.

This single morning gave way to several months of trials, making sure our blend was just right. Enough mint to give sweetness, the slightest hint of thyme to keep a fresh scent and the buttery, creamy quality of the wax. I think that the addition of watercress gives a hint of wildness, the scent of the river which gives Waterford its name.
